Two fast easy recipes

Crockpot Lazy Lasagna

1lb. ground beef
1 32-oz jar spaghetti sauce (you may want more, if you like a lot of sauce)
1 8-oz bag of noodles (I use egg noodles)
1 16oz container of cottage cheese (you can also use ricotta cheese- the cottage cheese just saves you on some calories)
1 8-oz bag of shredded mozzerella cheese
Parmesan Cheese

Brown Ground beef. Then add spaghetti sauce. Set aside.
Cook noodles according to package directions. Drain, then add cottage cheese and mozzerella cheese.
In crockpot- layer sauce mixture and noodle mixture. Start with the sauce mixture and end with the sauce mixture. Sprinkle with parmesan cheese.
Cook on low 3-4 hrs. And that's it.
This recipe is perfect for company. It makes a ton!

Weight Watchers Pumpkin Mini muffins

1 15-oz can pumpkin
1 box spice cake mix

Mix together and spoon into sprayed mini-muffin pan.
Bake at 350 for 30 minutes.
1 point per muffin

Kasey! I LOVE that crock pot recipe! It sounds easy and delicious. I am going to make it on Monday. Do you think I could just put it on the very lowest setting for 6 hours, or do you think that is too long? I can't get in and out of Philadelphia quicker than that!

thanks! I use this recipe a lot when I have company, because I can make it and forget about it and enjoy my company without having to waste time in the kitchen! I think you could definetely let it go for 6hr.s on low. I know I have left it in longer and it was fine!
